Normally when I try to wing a recipe, I bugger it up. 
However, these turned out to be pretty tasty and great for either brekky or a filling snack!

Here's what you'll need:

Pastry (recipe from Luke Hines "Clean Eating")
2 cups Almond Meal
2 Eggs
3 tbsp Coconut Oil
1/4 tbsp Baking Powder

2-3 Free Range Eggs (depending on size)
Handful of Chopped Spinach & Kale
3 tbsp Almond Milk
Pinch of Himalayan Pink Salt
Handful of Cheese
Sprinkle of Basil

Put pastry into moulds that have been sprayed with oil (I used Coconut Oil spray) and fill with the egg mixture. Bake in the oven for about 20 minutes on 180 degrees or until the pastry has gone golden and the egg has set.
