I myself am not a pancake eater however this recipe got the clean plate approval from both Madi & Madi.
I adapted the base recipe from the Jamie Oliver 'Superfoods' cook book & then added whatever I thought the kids might like. It's a great one to chop & change so you're able to put whatever ingredients you like there!
1 ripe banana
170mL skim milk/almond milk/whatever milk you want
1 large egg
250g wholemeal self raising flour
4 tablespoons natural yoghurt
pinch of cinnamon
1 tablespoon natural honey
2 tablespoons cacao
Mix it up. Chuck in fry pan & flip when the bubble rise on the top.
Drizzle in a little bit of honey & top with fruit!
This will make a stack to feed around 4 people.
