We all know that I'm a shithouse baker - I've owned it and I'll take it on board, but today I managed to put together an edible recipe that only requires you to eat one cookie before you're satisfied and maybe the ones you make will last a little longer than usual (we hope!).

Now that being said, I give full credits to JS Health for the base of the cookie, (for which this is the part I struggle with!). I can bring the taste, but I am crap at bringing the texture, so this has been adapted from her cookie recipe in Living The Healthy Life

They are shit-free (which means no refined sugars) and they are also gluten free (not on purpose - I eat all the gluten).

What you need:

2 tbsp Almond Meal
2 tbsp Natural Peanut Butter
2-3 Scoops Vanilla Happyway Protein (Use my code HAPPYLAUREN for 10% off!)
Handful Natural Almonds
Sprinkling of Cacao Nibs
1/4 Cup Desiccated Coconut
2-3 Tbsp Water
Sprinkle of Chia Seeds

Roll into balls, chuck into the oven on 180c and keep an eye on them for 10-12 mins. If you over cook almond meal cookies, they tend to go stiff and tough, so I place emphasis on the "keep an eye on them" part. 

Then eat. Enjoy. Devour.
