TOMATO & BASIL TUNA MACARONI
A kid favourite, but also a go-to for me when I literally cannot be assed cooking and need to whip something half decent up for dinner! Requires minimal thought, for maximum hunger.
250g Macaroni (or whatever pasta you want - I think macaroni is super fun)
2-3 tins of either tinned saltwater tuna or tomato & basil tuna
1 tin of tomatoes
1-2 bunch of broccolini
3 handfuls of spinach
2 tbsp Natural Greek Yoghurt
1/2 cup Stock (I used salt reduced chicken stock)
1 handful of grated cheese
Enough basil to taste (depending on which tinned tuna you use)
1 clove garlic
What you need to do:
1. Cook pasta and then drain water.
2. Add tinned toms, veggies, tinned tuna, basil, garlic and stock. Leave to simmer until stock has reduced, then stir.
3. Once stock has reduced, add greek yoghurt and cheese.
4. Add extra basil if you can't taste it.
It should be creamy, packed full of greens and DELICIOUS.
