Happy Way Protein Cookies
These cookies have a bit of everything in them. They have the thumbs up from Madi (who has tasted every single recipe I've tried and up until now she said they were shit - well she didn't say shit but her "mummy it's yucky" means it's shit so it was shit).
What you need: (Adjust ingredients as needed!)
2 Mashed Bananas
1/2 Cup PB (or any nut butter)
1 Cup Coconut Flour
3 Tbsp Pure Maple Syrup
1 Tsp Baking Soda
1/4 Cup Pumpkin Seeds
1/3 Cup Sunflower Seeds
1/2 Tsp Ground Cinnamon
2 Tbsp Chia Seeds
2 Tsp Pure Vanilla Extract
1/2 Cup Shredded Coconut
2 Big Scoops of Happy Way Chocolate Protein Powder
Put into balls, then into the oven at 180 degrees (celcius) for around 10 minutes. Just keep an eye on them so they don't over bake. Like I have, many times.
FYI - when it comes to your kids and protein powder, my kids had no reactions to Happy Way, however everyone's kids will be different, so if you're not comfortable with giving protein powder to your children, then keep these biccies for yo'self!
